16.06.13 | TURKEY BURGERS


I'm in the middle of a burger obsession, which is a bit weird because I normally couldn't give a fig about them. Maybe it's the weather? Maybe no matter how much your try to swish up your BBQ with the latest in grilling trends, it always comes down to the good old burger?
I don't eat any meat other than poultry & fish so I had to search for a good turkey burger to satisfy my craving, and this one was the hit.
I made this for some friends last week when they came over for a BBQ (we have been going BBQ crazy lately) and I promised them the recipe this weekend (Hi Kate!) so here it is.
These are perfect to cook inside on a griddle too but equally they are substantial enough not to fall apart on the bbq.

Enjoy it with some homemade ketchup and loads of crunchy pickles and you'll have yourself a right old treat :)

Lets go!




For 4 large or 5 medium burgers you will need:

- 500g turkey thigh mince
- 2/3 cup finely grated carrots
- 1/4 cup bread crumbs (I whizz up a couple of slices of bread in my food processor)
- 2 cloves garlic, crushed
- 1 tsp red onion, grated
- 1/4 cup of franks hot sauce
- sea salt
- freshly ground black pepper
- olive oil / spray oil

to serve: burger buns, grated cheddar, pickles, crispy lettuce

And you will need to do this:

1. In a medium bowl combine your turkey mince, carrot, breadcrumbs, garlic, red onion & garlic. Season with salt & pepper & mix well.

2. When the mixture is combined, separate into four or five portions.

3. Roll each portion into a tight ball, then press into a burger patty shape.

4. Heat a griddle pan on a large heat & spray or drizzle with oil. When hot add your burgers and fry for 4-5 minutes on each side or until cooked through.

5. Add your grated cheese and let it melt slightly.


6. Dress your buns with your pickles, salads & sauce - et voila! You're done!
